Estate Shiraz
Our Shiraz fruit is picked in late March or early April depending on the vintage conditions and is handled in small batches in the winery at Sanguine Estate. Following light crushing and destemming the wine is naturally fermented with natural yeasts from the vineyard in small open fermenters.
After approximately a week, batches of the wine are free run into new French barriques for barrel fermentation. The remainder is kept on skins for around 10 days to begin fermentation. When fermentation begins the wine is moved by gravity, to avoid pump shock, into aged French oak barriques. The Shiraz spends 20 – 22 months maturing in barrels.
Estate Shiraz Vintages
Our 2022 Shiraz is a beautifully balanced wine despite its youth.
The nose presents an enticing blend of pepper and spice. The palate offers a light and velvety texture, and highlights the black fruit character typical of the Shiraz grapes grown at She Oak Hill.
The soft tannins on the finish will contribute to this wines ageing journey. This wine, with its beautifully balanced fruit and spice, promises graceful evolution, setting it up perfectly for a place in the cellar.
Timely rainfall and moderate temperatures during this vintage’s extended growing period produced an elegant wine from She Oak Hill’s dry grown fruit. Delightful black fruits are immediately obvious, balanced by typically delicious Heathcote peppery spices.
A classic Heathcote Shiraz with deep purple colour and amazing dark berry fruits on the nose. The palate shows elegance and restraint, with a touch of pepper , a consequence of the uncommonly mild conditions during vintage. The wine is saturated with the ripe, dark fruit character of blackberries and cherries. The soft tannins attractive now, will contribute to the rewarding aging of this wine.

A classic Heathcote Shiraz with a deep brooding colour and amazing berry fruit character on the nose. The mid palate gives pepper and cinnamon spice and there is a lovely round finish.
